"I started my company, Cadeaux Chocolates, in 2007 after several years of study. My goal is to produce handcrafted chocolates which are rich and flavorful with appealing textures. I work with fresh, all-natural ingredients, local products as available, and fine chocolate from France and Belgium. I am inspired by the European traditions of confection making. I also admire the simplicity and beauty of Japanese art which influences my designs. Working in chocolate is a passion I enjoy sharing with others." Janet Shimada

Janet has received training at the Culinary Institute in America (Hyde Park, NY), the Notter School of Pastry Arts (Orlando, FL), the Callebaut Academy (St. Hyacinthe, Quebec) and L'Ecole du Grand Chocolat (Tain L'Hermitage, France). She completed the Maitre Chocolatier Program in France from Ecole Chocolat. She lives and works in Seattle, Washington.
